Keto-friendly breakfast quiche from @jacquelene7 for the days you need a quick meal that is easy to prepare.
- 1 packet bacon
- 2 tbsp USN MCT oil
- 4 eggs
- 1 1/2 cup fresh cream
- 1 tbsp almond flour
- 15 g spinach
- 100 g grated cheese
Preheat the oven to 200° C and spray a muffin/cupcake pan with cooking spray.
Drizzle the MCT oil in a frying pan.
Add bacon to the pan and fry until it is cooked.
When done, place the bacon in a bowl (make sure you get all the oil from the pan as well).
In a separate bowl, add your eggs and fresh cream and use an electric mixer to mix. Season the mixture to taste.
Add the almond flour and mix again.
In the muffin/cupcake pan, place the cheese in the cups by distributing it evenly among each cup (the cheese will be used as your crust).
Place the bacon on top of the cheese and then add your spinach on top of the bacon.
Pour the egg mixture slowly on top and bake for 20-30 minutes.
Let it cool a bit before you take it out of the muffin/cupcake pan.
Makes 12 servings.
