This is one of the easiest recipes that is packed with flavour. You can try this recipe for your next lunch or as a snack.
- 2 ripe avocados
- 2 strips of bacon
- ½ feta ring
- ½ cup basil leaves, shredded
- ½ cup cherry tomatoes, halved
- 1 tsp lemon juice
- ¼tsp sea salt
- ⅛tsp black pepper
Fry the bacon in a frying pan over medium heat until it is golden and crispy. Place the bacon on a paper towel to cool down.
Slice the avocados in half and remove the pits. Scoop half of the flesh out of each avocado half and leave the other half just as it is.
Place the scooped-out avocado in a bowl and mash.
Mix in the cherry tomatoes, basil, lemon juice and feta cheese.
Slice up the cooled bacon, add it to the other ingredients in the bowl and mix it all together. Season with Himalayan salt and black pepper.
Scoop the mixture back into the remaining avocado halves and enjoy.
