LEMON POPPY SEED LOAF RECIPE

LEMON POPPY SEED LOAF RECIPE

Try this healthy recipe by @Barbellsandbrowniesza.

Lemon Poppy Seed Loaf:

Juice of 2 lemons
Zest of 1 Lemon
2 x scoops of USN Bluelab vanilla whey
150 g fat free yogurt
1 cup of oats
1/4 cup coconut flour
2 eggs
1 tsp vanilla extract
1 tsp baking powder
1 tsp baking soda
1 cup unsweetened almond milk
2 tsp poppy seeds
A tablespoon of xylitol or any sugar replacement

Blend all ingredients in a blender, pour into a loaf tin sprayed with cook n spray. Bake loaf for 25-30 min on 160 degrees.

Glaze:
3 tablespoons fat free yogurt
Half a scoop vanilla whey and a squeeze of lemon
And a teaspoon of any sugar replacement of choice. Mix together and pour over loaf that has been cooled down.
