For the crust:
1 scoop BlueLab™ 100% Whey chocolate peanut butter protein powder
1 & 1/4 cups pecan nuts
3/4 cup desiccated coconut
1/8 cup honey
1/4 cup coconut oil
For the filling:
1 scoop BlueLab™ 100% Whey protein powder
1/2 cup pecan nuts
3/4 cup dates, soaked in boiling water
Pinch of salt
Extra pecan nuts for decoration
- To make the crust: blend the pecan nuts in a blender or food processor, until it’s crumbled. Add coconut and protein powder to crumbled pecan nuts. Melt honey and coconut oil together, and add to the dry mixture. Mix well and press into a greased 22 cm/9″ dish.
- For the filling: pour off most of the water of the dates, and mash with a fork. Roughly chop the pecan nuts, and add to the dates along with the protein powder and salt. Mix well and scoop onto crust. Add extra pecan nuts on top of the filling. Refrigerate for an hour, slice and enjoy.
