Coconut Cake Recipe

INGREDIENTS:

4 Eggs

1 Cup Coconut Cream

1 & 1/2 Teaspoon Sweetener (4 x Sachets)

1 Tablespoon Vanilla Extract

3/4 Cup Coconut Flour

1 Serving USN BlueLab™ 100% Whey Vanilla OR Buttermilk flavour

1/4 Teaspoon Salt

1 Tablespoon Baking Powder

METHOD:

Preheat the oven to 180 degrees.

Whisk together the eggs, coconut cream, sweetener & vanilla.

Add the coconut flour & whey, & continue whisking until the batter becomes smooth & free of lumps.

Add 1-2 table spoon water if the batter seems too thick. Using a rubber spatula, stir in the salt & baking powder. Transfer the batter to a prepared baking tin & BAKE for about 45 minutes.

Allow to cool for about 15 mins before removing it from the pan!

SAUCE

1/2 Cup Coconut Cream (rest of the tin)

2 Servings USN BlueLab™ 100% Whey Vanilla OR Buttermilk Toffee

Topped off with desiccated coconut & coconut brittle.
