KETO Carrot Cake

Now you can have your cake and eat it! This recipe is delicious and KETO friendly as well!

The recipe takes about 55 minutes to complete and produces 10 large slices of yummy carrot cake.

Ingredients: KETO Carrot Cake

  • 5 Eggs
  • 200 g butter, melted
  • 3tbsp USN Keto Sweetener
  • 2tsp vanilla essence
  • 200 g(2 cups) grated carrots
  • 50 g (1/2 cup) wallnuts chopped, optional
  • 50 g (1/2 cup) Desiccated/ shredded coconut, unsweetened
  • 150 g (1 1/2 cups) almond flour
  • ]1tsp ground cinnamon
  • 2 tsp baking powder
  • 1 tsp ginger, optional

Ingredients: Cream cheese frosting

  • 200 g full cream cream cheese
  • 1-2 tbsp USN Keto Sweetener

KETO Carrot Cake Recipe Directions:

How to bake

  • Beat eggs, melted butter, sweetener, and vanilla together.
  • Add grated carrot, walnuts, and coconut then mix in all the dry ingredients.
  • Pour into a greased and lined tin.
  • Bake at 180C/350F for 40-50 minutes or until a fork pushed in, comes out clean.
  • Ensure your cake is completely cool before icing/frosting.

Cream cheese frosting (optional)

  • Warm the cream cheese in the microwave for 20 seconds to soften it.
  • Stir in 1-2 tablespoons of sweetener of choice until you get the level of sweetness you prefer.
