Lemon & Poppyseed protein muffins

WET INGREDIENTS:

10g oil/butter (I used olive oil)

90ml (not grams) fat-free milk

100g fat-free yoghurt

2 tsp lemon zest

1 tsp vanilla essence

sweetener drops (taste and adjust) (@delitedashfood )

 

DRY INGREDIENTS:

1.5 tsp baking powder

60g flour

1/3 tsp salt

45g vanilla whey protein powder (@usnsa )

30g granulated sweetener/ sugar (I used erythritol)

9g (1 tbsp) poppyseeds

 

METHOD:

1.) Combine the wet ingredients well

2.) Add in the dry ingredients

3.) Mix until smooth

4.) Add mixture to a lined muffin tray ( recipe makes 9 muffins)

5.) Bake in a preheated oven, at 180C, for 15- 20 minutes.

 

MACROS:

Makes 9 servings

Each muffin contains: 68 calories ( 5.4g P | 6.6g C | 2g F )

Entire batch: 613 calories ( 48.2g P | 59.8g C | 17.6g F )
