I low-key love neapolitan ice cream…it’s debatable 3 of the best flavours coming together: strawberry, vanilla and chocolate. I just had to use that inspo for protein cupcakes and the result was fantastic!
Use the same amount of the following ingredients for each flavour. Just switch out the flavour of protein for each and when doing the chocolate, add a tsp or 2 of cacao to make it more chocolatey. I used @usnsa whey protein buttermilk, strawberry and choc peppermint crisp.
30g whey protein
2 tbsp oat flour
½ tsp baking powder
⅛ tsp baking soda
Sweetener of choice
Pinch of salt
2 tbsp plain fat free yogurt
60ml milk of choice
Method: Preheat the oven to 180 degrees Celsius. Start with the chocolate- Mix all the ingredients together, remember to add a tsp or 2 of cacao. Pour batter into greased muffin tins.
Repeat for vanilla and scoop onto chocolate, and lastly do the same for the strawberry.
Bake for 20-30 minutes, until golden brown.
Frosting: sugar free pudding, casein protein powder and yogurt.
