Protein Scones by @squats_and_scrumpchies
60g self-raising flour
70g whey protein (I used @usnsa vanilla ice cream)
30g mashed banana (can also use 30g greek yogurt or butter)
45g erythritol (you can sub in any sweetener of your choice, amount will differ though)
150ml almond milk (or any milk)
A pinch of salt
1 tsp baking powder
1 tsp vanilla essence
1 egg to glaze
Method: Preheat the oven to 180 degrees Celsius. Mix all the dry ingredients and all the wet ingredients separately. Now mix it ALL together. Pour batter into greased muffin tins (this mixture should make about 11 scones). Brush tops with a bit of egg wash. Bake for 20-30 minutes, until golden brown.
Cut open, slap some fat-free cottage cheese and jam @delitedashfood on there and enjoy!
