Cutie Pie

This recipe makes 6 servings.


18 g gelatine with 3 tablespoons of water
6 teaspoons coconut sugar
1 teaspoon vanilla extract
2 scoops of BLUELAB 100% Whey Protein powder
1/2 cup of water
2/3 cups of egg whites
3 bars of sugar-free milk chocolate


For the chocolate:

  1. Melt the chocolate until pouring consistency.
  2. Use a spoon and place about 1 tablespoon of melted chocolate into the bottom of 6 silicone muffin trays.
  3. Use a pastry brush to paint the chocolate onto the sides of each muffin cup making sure everything is covered.
  4. Place in the freezer for 10 minutes.
  5. Save the rest of the mixture for the toppings.

For the marshmallow:

  1. Dissolve the gelatin in the water for 2-3 minutes.
  2. Boil half a cup of water on the stove with the vanilla extract.
  3. Add gelatin mixture, and reduce heat to a simmer.
  4. When dissolved, add the coconut sugar and stir.
  5. When dissolved, remove from the heat and wait for the mixture to cool down to turn into a syrup (about 10 minutes).
  6. Blend egg whites until doubled.
  7. Add protein powder and blend again until the mixture turns into a whip.
  8. Add the syrup and blend again for a few minutes.
  9. Fill the muffin tray with the mixture.
  10. Put it in the fridge for 20 minutes to set.
