Hidden Centre Chocolate Protein Muffins

Wet ingredients:

  • 125g pumpkin purée
  • 2 large egg whites (66g)
  • 50g fat-free yoghurt
  • liquid sweetener or you can use a powdered one if you prefer



Dry ingredients:

  • 25g cocoa powder
  • 20g oat flour
  • pinch of salt
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 25g vanilla whey protein powder (I used @usnsa blue lab whey)


For the centre:

  • 1 protein bar, cut into 6 (I used @usnsa trust crunch cookies and cream)


1.) Add the wet ingredients to a large bowl and mix well.

2.) Add in the dry ingredients and mix until combined.

3.) Pour the mixture into your lined cupcake tray.

4.) Add a piece of the protein bar to the centre of each muffin.

5.) Bake at 180C / 350F for 12-15 minutes or until a toothpick comes out clean.



  • 90 medium-fat cream cheese
  • 10g chocolate whey protein (you can use any flavour you like)
  • 1-2 tsp water to thin

(Recipe makes 6 standard sized muffins)
